3 cups white self-rising cornmeal
1 cup self-rising flour
1 teaspoon salt
I teaspoon baking soda
2-3 tablespoon garlic powder (to taste)
1-2 teaspoon creole seasoning (to taste)
THEN MIX IN finely chopped onion (I use an entire onion)
Beat 2 eggs and add to mix... toss together to blend with fork...
Then add in 2 cups of buttermilk. (can use jalepeno juice for 1/4 cup of liquid(
Mix just until dry ingredients are mixed mix will appear fluffy.
Drop by spoonfuls into hot oil
Turn after brown; they should float
Remove and drain
A bit different from the corn and clam fritters I grew up on!
But these go well with fish.
